There's alot of fanfare and hoohah about chicken cutlets these days, but I've always believed that simple process and fresh ingredients produce the best results in the kitchen, and there is no doubt that this chicken cutlet on a bed of arugula lightly dressed with lemon is a grand slam on a menu filled with home run hitters. Paired with a martini (often dirty) this dish is my favorite and I return to it frequently. I've eaten my way through the menu, and wether it's a burger or a Detroit style pizza, a few apps or just a simple salad, it's the chicken cutlet that I return to most often. Don't skip this seemingly innocuous dish, it's pure joy on a plate.

You will not regret trying this dish! The salmon is nice and flaky. The spinach and potatoes with eat cream sauce is delicious. Really yummy flavor!
